Our Cabernet Sauvignon ranks among our most popular Classics varietals. We carefully select the grapes to achieve the richness and balance associated with Sonoma County Cabernet Sauvignon. Up to four weeks of fermentation and maceration (time in contact with the grape skins) develops the optimum color and flavor in the wine, while aging in 60-gallon oak barrels adds softness and a light vanillin overtone. The finished wine exhibits deep, berry flavors, a peppery character and a subtle overlay of oak.
